After learning how easy it was to make my own peanut butter cups, I knew I had to try and make more of my favorite Halloween Candies. These Chocolate Coconut Cups are basically Vegan Mounds bars, in cup form!
1 & 1/2 Cups Vegan Chocolate Chips
1 & 1/2 Tablespoons Coconut Oil
1/2 Cup Shredded Coconut Flakes
1 Tablespoon Coconut Nectar or Maple Syrup
Pink Himalayan Sea Salt
Shredded Coconut Flakes
Note: If you’re wanting to make this even healthier, you can substitute Cacao Powder for Chocolate chips! I suggest doing about equal parts Cacao Powder and coconut oil if you do, and adding a bit of maple syrup to the Cacao mixture to sweeten it!
Heat the chocolate chips and coconut oil together until fully melted, and pour the first layer of chocolate into your molds! I personally love using silicone cupcake liners for my coconut Cups.
Put your liners or molds into the freezer for about 5 minutes, or until the chocolate has solidified.
Next, you have two options for the filling:
you can just mix together about 1/2 cup of the Shredded coconut flakes with 1 Tablespoon of coconut oil,
or you can blend 1/4 cup of the coconut flakes with 1 Tablespoon of coconut oil and then add in the remaining 1/4 cup of coconut flakes to the mixture.
Layer a dollop of whichever variation of Coconut filling you prefer on top of your initial chocolate layer. I suggest putting the cups back into the freezer at this point so that they set up and solidify before adding the last layer of chocolate.
Finally, top the coconut filling with chocolate so that the coconut is fully covered and top with coconut, salt, or an almond.
Pop them back into the freezer for another 5 minutes and then they should be ready to eat!
The Cups should stay fresh in your fridge for about one week. (Makes approximately 6 Cups)
